Foodie Friday: Pumpkin Protein Chocolate Chip Cookies

So yes I am that typical female who LOVES Pumpkin EVERYTHING!!! It is one of the things I look forward to all year, for fall pumpkin season. My birthday is in the fall and I have even opted for pumpkin pie vs cake before. No one can touch my grandmother’s homemade pumpkin pie. My favorite wine is probably pumpkin wine, and if you have not tried it yet you should, like yesterday it’ll change your life. Obvi if you are fortunate to be a close friend of mine ;) you know I eat very clean and strive to not put junk in my body except for on occasion. (I am human and I like to live). So most of the stuff out there is a little too far for even me, the pumpkin addict. I mean really pumpkin M&M’s???? yuck. Oreo’s, poptarts, ect ect its all processed crap and does nothing for your body and is loaded with sugar!!! You should know by now I have a love for food, I love to try new things, go to a new restaurant, and experiment in the kitchen! I’ve had my fair share of flops but what happen in my kitchen last night was nothing short of miraculous! Lol. I wanted a pumpkin treat that was just sweet enough to kill my sugar tooth, but clean enough that it does more good for my body than bad. This cookie is low carb, has protein, and almost NO fat!!! (per cookie of course) Pumpkin Protein Chocolate Chip Cookies Makes approx.. 20 cookies Ingredients: 1 can Pumpkin puree 4 Egg Whites ½ Tbsp Pure Vanilla Extract 1 Tsp Baking Powder 1 Tsp Baking soda ½ Tbsp Cinnamon ¼ Tbsp Pumpkin Pie Spice ¼ Tbsp Nutmeg 2 scoops Earthfed Vanilla Protein Powder---(You could use whatever you have on hand, however I strongly suggest you try EarthFed you wont be sorry!) ½ Cup Organic Old Fashioned Rolled Oats ¼ Cup Enjoy Life Chocolate Chips Directions: Set your oven to 350 degrees, and if you don’t already have a nonstick cookie sheet, add it to the list, but grease your pan otherwise you’ll have a crusty freakin mess. If you have a Ninja blender use that, if you don’t go to the store and buy one you need it. But for now you could use whatever one you have as long as it won’t pulverize the dough. So throw everything into Ninja except for the oats, protein, and chocolate chips. Blend well, then add the oats and powder and blend again. Once everything is well mixed, you can fold your chips in with a spatula. Use your best judgement when spooning onto sheet, they won’t rise much and don’t settle much either. I ended up with 20 cookies, depending on your cookie size you could end up with more or less. (If you have more though make sure you check your cookies at 10mins you wouldn’t want them to burn) Put them in oven for 15 mins. Let cool (they will till be very soft but will harden as they cool) Once cool enough to transfer to a plate throw em in the fridge for 20-30 mins so they set completely. IF you have left overs, store in an air tight container in fridge. Nutritional Facts: Approx: per cookie Calories- 45 Fat- 1g Carb- 5g Protein- 4g
