Foodie Friday: Pretzel Crusted Chicken Tenders

Recipe Page: Pretzel Crusted Chicken Tenders

Ingredients:
2 cups salted pretzels (but really, can there ever be too many pretzels? USE AS MANY AS YOU WANT! just don't overfill the poor food processor)
1/2 cup parmesan cheese (personally, I used cheddar cheese...)
1/2 cup flour
1/4 tsp pepper (optional)
2 eggs
1 lb boneless chicken breasts (I actually used Purdue Chicken Tenders)
Recipe:
Cut the chicken tenders down into small nugget sized pieces
Mix pretzels and cheese in food processor (don't make the pieces of pretzel too small.. or else it will be like normal breading, but super fine.)
Add pepper to flour and mix in a separate bowl (I didn't use the pepper, personally, but I'm sure it makes it tasty as shit).
Whisk eggs in another bowl, and pour cheese/pretzel mix in a third.
Bread chicken by first covering in flour, then dipping in egg, and finally coating in pretzel/ cheese mix.
Fry in vegetable oil. Flip several times until fully cooked.
Serve with ketchup or your favorite dipping sauce! Enjoy!
Personal Review:
This being my first time every making this recipe, I obviously screwed up. It was ALSO my first time using a food processor, and not knowing its power I processed the shit out of the pretzels. This left mostly pretzel dust when you were supposed to have small chunks of pretzels. So I ended up smashing pretzels in a ziploc bag and adding it to the cheese/pretzel dust. I feel that had I done the pretzel/cheese mix right, then it would have been a bit better.
Also, a tip for anyone who is anxious about frying. Don't be.. It's honestly much easier than you think as long as you make sure to cover your food as you fry it, and you don't turn up the heat too high. So just keep the heat around 6 or 7 and be sure to cover the nuggets as you fry them on every flip. You don't want them to burn (which I did on my first 5 or 6), so be sure to not walk away from the stove!
A great side to go with this tater tots!!! You could probably make them with mac n' cheese as well (goin off the pretzel and cheese love!). Enjoy guys!!
