Foodie Friday: Super Simple Banana Bread Muffins

So the baker in me, whenever I see overripe bananas, has an overwhelming urge to make banana bread in some form. It just so happened that my roommate bought bananas and then forgot about them. When I texted her asking if I could use them to make banana bread, she gave me the okay, and I immediately went to Weis and picked up the few ingredients I didn't have on hand so make banana bread using the recipe I found on Pinterest claiming to be "Super Simple." So this banana bread really was super simple! I had most of the ingredients on hand, which is saying a lot coming from a college student. What I really loved about this recipe was that it allowed you to determine how much sugar to add. The blogger also gave tips and tricks as to how to make the recipe healthier, which i will definitely be trying next time I make this bread.

Here's what you will need for the original recipe, which is the one I followed:
INGREDIENTS
3 bananas (brown, mashed)
⅓ cup melted butter
½- 1 cup sugar (depends on how sweet you want it)
1 egg, whisked with a fork
1 tsp vanilla
1 tsp baking soda
pinch of salt
1½ cups flour
INSTRUCTIONS
Preheat oven to 350
In a bowl, mix all ingredients by hand until well incorporated
Pour into a greased bread pan (approx 9x4x4)
Bake 50 minutes to 1 hour or until browned and toothpick inserted in middle comes out clean (check at about 50 minutes)
Cool on rack
My tips and tricks:
I doubled the batch, using six bananas and about 3/4 cups of sugar.
Since I don't have a bread pan, I made jumbo muffins.
I made one batch of plain muffins and one batch of chocolate chip.
Like the recipe said, these muffins were super simple, and they were also delicious. I shared them with friends and roommates. My roommates and I all went hiking, and after our hike, each of us took a muffin. Trust me, they didn't last long. They were great for a snack, or just as breakfast. I will definitely be making these again, possibly even for Christmas gifts!
