Foodie Friday: Cream Cheese Stuffed Hot Peppers

Ah yes, another post on how to make the most of local produce and farmer's market finds. This recipe goes hand in hand with my hot pepper dip, since I made them both the same day utilizing the same ingredients. Again, I went about these babies without a recipe, hoping for the best. So let's get right into it, shall we?

Ingredients:

  • Hot peppers

  • 1 Block of cream cheese softened

  • 1-1 1/2 cups shredded Mexican blend cheese

  • Olive oil

Directions:

  • Slice peppers length-wise and shell out insides. Avoid making contact with your skin!

  • Mix together cream cheese and shredded cheese in a bowl until well combined.

  • Scoop cheese mixture into peppers.

  • Line peppers on a foil covered tray and drizzle with olive oil.

  • Bake peppers for about 15-20 mintues at 350 degrees.

  • Enjoy!

There peppers are another food you could easily serve at a football screening and have a great reaction. The peppers were reminiscent of Super Bowl food, or something you'd find at a summer party. They're simple to make, yet deliver on flavor. The peppers were so fresh and in-season, delivering on the hotness factor for sure! The cheese blend was the right balance of creamy and sharp, making it the perfect filling to compliment the peppers. If you try out this recipe, let me know what you think!
