Foodie Friday: Apple Crisp Stuffed Apples

Apple picking season is upon us, and I personally believe there is nothing better to do with some freshly picked apples than to spend a chilly fall day baking with this delicious fruit while a nice breeze blows in through the window, carrying the scent of cinnamon throughout your entire house. Last autumn, I used some baking apples picked from a local orchard to make these delicious apple crisp stuffed apples I found on Pinterest.

Although these aren’t the easiest dessert to make, they are definitely worth the extra effort.
So here is what you will need to make these tasty apple treats:
•8 apples
•4 tablespoons butter
•⅓ cup brown sugar
•½ teaspoon cinnamon
crumble topping
•½ cup flour
•¼ cup oats
•⅓ cup brown sugar
•¼ cup sugar
•¼ teaspoon salt
•½ teaspoon cinnamon
4 tablespoons butter, chilled and cut into cubes
Directions:
•Preheat oven to 400 degrees.
•First, prepare the crumble topping. In a medium bowl whisk together flour, oats, brown sugar, sugar, salt, and cinnamon. Cut in the butter with a pastry knife, or two forks, or with your hands until mixture is crumbly. Set aside.
•Peel and chop 4 of the apples. Add chopped apples, butter, brown sugar, and cinnamon to a medium sauce pan and sauté over medium heat for 8-10 minutes or until apples are tender. Remove from heat.
•Chop the tops off of the remaining 4 apples and use a spoon to scoop out the flesh. Discard the flesh. You don't need to get every little bit out, just enough to make a "bowl" for the filling.
•Fill scooped-out apples with apple filling from the sauce pan. Top with a generous amount of crumble topping.
Place stuffed apples on a baking sheet and bake for 10-15 minutes until crumble topping is crispy. Serve warm and top with ice cream and caramel sauce if desired. Enjoy!
My tips and tricks:
Reduce the amount of flour used in the crumb topping and add sugar for a sweeter topping.
Use flesh from apple bowls for filling
Make sure you make the walls of the bowls thin enough that they get warm. If the bowl is cold but everything else is hot, it detracts from the taste.
Since you will be eating the apples, choose apples based on your preference rather than if they are baking apples or not. Baking apples can be used for the filling, but I recommend an eating apple for the bowls.
Drizzle with warm caramel and top with ice cream. Now dig in!

I am really looking forward to giving these apples another shot this year. My crumb topping was not very sweet last time I made them, and I have a major sweet tooth. I also used baking apples, which tend not to be as sweet as eating apples. Next time, I’d use a Pink Lady or even Golden Delicious. Overall, these little apple bowls are a lot of work, but definitely worth it in the end. Not to mention going to the orchard is a ton of fun and a great way to spend a fall day with my boyfriend.
