Foodie Friday: Two-Ingredient Pumpkin Spice Cake

I’ve been seeing them all over Pinterest. two-ingredient cake recipes. So I decided to give one a try, because well my love for pumpkin spice cannot be suppressed. I headed out to the grocery store and picked up my two ingredients: spice cake mix and pumpkin puree. Now, it’s time to give you, fine reader, the run-down on this two-ingredient cake.

Ingredients and Directions:

1 box Spice Cake mix

1 can of pumpkin puree

2 eggs

1 T vegetable oil

1 cup water

Frosting of your choice

  • Combine cake mix and pumpkin.

  • Realize you did not buy the correct size can of pumpkin

  • Add two eggs, water, and oil. Stir to a cake-like consistency

  • Spray pan with cooking spray

  • Bake for approximately 35 minutes at 350 degrees

Tips and Tricks:

  • Since my cake came out a bit deformed, and since I am giving it away as a gift, I chose to cut the excess off the top (which I then ate myself). I did that by flipping the cake onto a baking sheet, slicing the excess off, then returning the cake to the baking pan.

  • Buy the large can of pumpkin for the two-ingredient method.

So, as you can see, my two-ingredient cake turned into a five-ingredient cake. Despite this dilemma, the cake came out incredibly good. I chose to frost it with cream cheese icing, giving it that wonderful fall flavor. I’m giving this cake to my boyfriend as apart of his back to school care package, and am hoping he will love it. I haven’t made many cakes before, and when I do I typically follow the directions on the box. Having to improvise really tested my baking skills and knowledge. Because let’s be honest, this cake could have been a complete disaster and waste of money.
