Under Blade Steak with rice and Asparagus

Background: The under blade steak comes from the chuck or shoulder of the beef animal. The chuck is not known to be tender but this is most certainly the exception to the rule. The USDA can measure tenderness by this fancy computer that tests the resistances of cutting the meat and the only cut tenderer than this fine piece is the filet!!!! Since it is from the chuck and a newer cut you can expect to pay $10-$15 dollars a pound compared to that $25-$30 a pound of filet.

Ingredients

2 Under blade steaks, about .3-.4 lbs a piece

3 tbl spoons olive oil

3-4 garlic cloves

6 tbl spoons butter

Box of Rice

Asparagus

Prep

  • Take the steak out and get it to room temp. We want it room temp all the way through, remember always rinse meat with water.

  • Pull out your butter, garlic, salt, papper and oil put next to the pan

Cooking

  1. Start by doing your box of rice, tip follow the directions on the box!

  2. Take a large skillet and get it smoking hot

  3. Add 2 tbl spoons of oil, I prefer a rosemary infused olive oil but any will do

  4. Take your cloves of garlic and smash them with the side of a kitchen knife. You can slice them but we are after the oils more than the clove itself

  5. Brown the garlic but use caution not to burn

  6. Keeping the pan hot, drop your steaks *These steaks are lean so we are going to be moving fast.*

  7. Let each of the steaks cook for 1 minute and then flip

  8. Add 3 tbl spoons of butter and salt and pepper to taste

  9. After another minute flip, salt and pepper this side, using the now melted butter baste your steaks, a big spoon works best here.

  10. Flip 2-3 times more times about a minute on each side, while continuing to baste with the butter. Removing them here is about medium rare.

  11. Take off and allow to rest for 5-8 minutes.

  12. While the steaks rest, fry up the asparagus in the delicious base you have in the pan, add the other 3 tbl spoons of butter and some salt and pepper. Keep the heat on the pan on high.

  13. Roll asparagus around until they soften and serve.

You know have a middle budget, high end tasting meal!!! You have the juicy steak that melts in your mouth, paired with some fresh asparagus and smooth rice. Anyone will be impressed!!

So babe made this one night after having seen it in a video we watched, and it is one of my faves. He is good in the kitchen, but this... this was eyes roll in the back of your head good! My mouth was watering just reading this recipe over because I loved it THAT much. This recipe is so simple and so good. Everything goes so well together, and if you want your partner to help you make this recipe (like we did, we made this meal together) have them help you with the rice (cause that's all I was super good at for this recipe) especially since you don't wanna burn it. So a second set of eyes can help! But yeah, one of my favorite meals that I could have again and again without even getting tired of it!!! Below is a picture of this godly feast, corn is a lovely addition if you so choose! And super easy!
