Foodie Friday: Cream Cheese Brownies

Since I was little, I was always obsessed with cream cheese brownies, I absolutely LOVED them! Although I only ever had them at my Mammy’s house, they were still my favorite. I would look for them everywhere… But could never find them. Well, the other day, my mom brought me a recipe for cream cheese cupcakes. I made them and LOVED them, but couldn’t help but think, “hey, I can make cream cheese brownies out of this!” So that is what I did, I took the recipe for the cream cheese filling and made some brownies to bake it on top of and well, here is the recipe and the results!

So this recipe is relatively easy, here is the recipe for the cream cheese filling, make this first, make your brownies second!
Ingredients:
1 (8 oz) package cream cheese, softened
1 egg
1/2 tsp salt
1/3 cup sugar
1 cup mini chocolate chips
Like I said, make your filling first! In a medium bowl (or in a kitchen aide mixer if you have one!) beat cream cheese, egg, sugar, and salt until it is smooth. Then you add the chocolate chips and you set this mixture aside!
Now that you’ve made the mixture, make your brownies how it is instructed on the box!
Spray cooking spray on the bottom of whatever pan you plan to use, spread on with a paper towel so it doesn’t leave a weird layer on your brownies! And spread the brownie mix in an even layer in your pan!
After your brownie mix is settled in the pan, you pour the cream cheese mix on top of your brownie mix! Spread this as evenly (or unevenly) as you’d like.
Bake the brownies per the instructions on the brownie box. Bake as you would any brownies and check the center with a toothpick as you go.
Tips and tricks to make this recipe better:
You can choose to make more or less cream cheese filling as you’d like, I feel like this is just enough, although this recipe makes enough for just a thin layer across the top your your brownies. But again, more or less is up to you!
I have used regular sized chocolate chips in this filling recipe AND chocolate chunks by tollhouse. Both came out amazingly, so mini chocolate chips aren’t all you can use. The more chocolate the better, right?
You can swirl the cream cheese into the brownies if you so choose. I have not tried this yet, but I plan to do so in the future. So if you do this, and it comes out awesome, let us know! Because we love tweaking our recipes!

These came out just as flawlessly as the cupcakes did (I will put up this recipe at some point as well). I always think there can be more cream cheese filling, but this recipe is absolutely perfect the way that it is, and I wouldn’t change a thing, but that doesn’t mean that you can’t! Enjoy!
