Foodie Friday: Strawberry Upside-down Cake

This was my first upside down cake I have ever tried to make. I always was intrigued by the way they seemed to work, they always seemed to come out so perfect and tasty. So for my boyfriend’s birthday, I tried making one! He loves strawberries so I figured, why not try something new and different?
Recipe and ingredients adapted from afewshortcuts.com

Ingredients:
1 (18 oz) package of yellow cake mix, batter prepared as directed on package
2 cups crushed strawberries
1 package Strawberry Jello (6 oz)
3 cups mini marshmallows
Instructions:
Preheat oven to 350 degrees F.
Spread crushed strawberries on the bottom of a 13x9 inch baking pan.
Evenly sprinkle strawberries with the dry yellow, and top with mini marshmallows.
Prepare the cake mix by the directions on the box and spread evenly over the marshmallows and strawberries.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes.
Cool in the pan for 15 minutes. Run a knife around the pan to loosen the sides, and turn the cake out onto a serving tray.
Store cake in the refrigerator.

Tips and shortcuts that make this recipe even better:
Besides using a 13x9 baking can, you can also use a bundt pan. This is what I used, it works just as well as the 13x9 (I can only imagine). So you have options!!
When you have your finished product and you turn the cake out onto a plate, you will see that most of the strawberries are still probably in your pan. What I did with this is I scooped them back onto the top of the cake. But another alternative I thought of was keeping them in the fridge with the cake and if you decide to serve the cake with ice cream, put the strawberries in the ice cream.
Another alternative could be to mix in some of the strawberries into he actual cake! I have yet to try it, but it sounds lovely!
I suggest serving with whipped cream or cool whip!
Review:
I absolutely loved making this and eating it! It was so light and tasted almost like angel food cake!! But all you’re using is yellow cake, so this was amazing to me. I would most definitely make this again without hesitation. It’s so much easier than it sounds and this is definitely an easy one to test your skills with!!
