Foodie Friday: Simple and Speedy Cheesecake Stuffed Strawberries

In lieu of having no plans for the 4th of July, I decided to make myself some dessert and have my own mini-celebration which involved me sitting on my couch reading a book and eating some of these strawberries, hoping to maybe catch of glimpse of fireworks out my window, despite the fact that it looked like it might downpour at any minute. But enough backstory, let’s get to what you really want to know, and that’s whether or not the Simple and Speedy Cheesecake Stuffed Strawberries are actually simple and speedy, and if they are delicious. I must say, I’m a sucker for cheesecake, and these did not disappoint. Honestly, I may like no-bake cheesecake better than the stuff you bake. There’s just something about the sweet goodness of cream cheese mixed with powdered sugar and a hint of vanilla. My mouth is watering just thinking about it.

So, here is the list of ingredients and directions taken from makeit-loveit:
▪1 lb fresh strawberries
▪8 oz cream cheese
▪1/2 cup powdered sugar
▪1 tsp vanilla
▪chocolate chips (optional)
▪graham crackers (optional)
Rinse your strawberries and cut out the stem plus a little more of the center of each strawberry. Then cut off enough of the tip of the strawberry so that it can stand alone. Next, beat together your cream cheese, sugar, and vanilla until nice and fluffy. Then place mixture in a pastry bag and pipe into each strawberry, adding a little extra to the top. Optional: sprinkle graham cracker crumbs to the top or drizzle with melted chocolate chips. Place in fridge until thoroughly chilled. Don’t make too far in advance or your strawberries will sweat and may become a bit soggy.
Tips and Shortcuts from me:
Make sure you buy big enough strawberries. Unfortunately when I went to the store, Walmart was running a great sale on strawberries and the only ones left were super tiny. I think I had about six decent sized strawberries to use, the rest I ate.
If you don’t have access to a mixer, which I don’t because I live in a college dorm, buy the whipped cream cheese. It’s already night and airy, which makes it easier to mix with a spoon.
If you also don’t have a piping bag (like me), you can simply scoop the mixture into the opening of the strawberries. It won’t look as pretty, but it tastes the same.
Leftover mixture can be used for fruit dip, or spread on graham crackers for a yummy snack!
Review:
I loved these strawberries. They were delicious and simple to make, despite not having half of the equipment mentioned in the recipe. The fact that these are no-bake makes them easy to make if you don’t have access to a kitchen or just don’t feel like firing up the oven on a hot day. They also use relatively few ingredients, which makes them a low-cost crowd pleaser. The combination of the strawberries and the cheesecake makes a sweet-but-tart dessert that is guaranteed to please at a picnic or casual get together.
